The Jam Stand

I'm glad that we like jamming because we we had a SERIOUS Jam Sesh this weekend! After receiving tons of orders, thanks again guys, we had some catching up to do!

We started our Jam Sesh Saturday with some homemade biscuits.. Because, well, you just can't Jam on an empty stomach.....


And then we dove right in! We had orders to fill - - 

-Drunken Monkey Jam (Banana+Rum Jam)

-Nutty Monkey Jam (DMJ+PB)

-Homemade Peanut Butter

-You Put da Caramel in da Coconut (Coconut+Caramel Dessert Jam)

-Razzy Gabby & a Side of Jalapeño (Raspberry+Jalapeño Jelly)

Have you ever drained, cracked, and peeled a coconut? We had to pull out the heavy hardware for this one..

By the end of the weekend we filled 60 jars!!! It was a mixture of hard work, some love and silliness, and a lot of jamming :) 

Good thing we had our 23 Quart Pressure Canner!!! 

We took a break to deliver our jam to a brunch party nearby. It was the perfect mix of Friends, Food, and JAM! Everyone loved the Jam so much that we will be hosting a Jam Pairing Brunch next week.. every course will be paired with a Jam Stand Jam, but more on that in the next post!

The J+S will be having a Jam Sesh this Saturday and is taking requests!

- Small heart-shaped Red Velvet cakes topped with our Coconut Caramel Jam (perfect for Valentine's Day!!!)

Anyone who knows me, knows that I have a sick obsession with peanut butter. I had a choosy mom who chose JIF. It won my heart over at an early age. And to this day, if you give me anything with peanut butter and chocolate I am in heaven. Reese’s peanut butter cups will always be one of my favorites. I foresee a chocolatey peanut spread in our near future…. 

As I have grown up a bit, I put the JIF down and have become addicted to the real deal. Peanuts and peanut oil. Simplicity is a beautiful thing.

Jess and I shelled A LOT of peanuts… 

We put these beauties in the food processor with some peanut oil, salt and honey.

And blended until it was a smooth and creamy consistency.

When making peanut butter, the salty sweet ratio is dependent on the amount of salt or honey used. The consistency and thickness of the peanut butter relies on how much peanut oil is added.We think we have found the perfect combination of these few ingredients that makes one tasty peanut butter. We paired this with our Drunken Monkey Banana Jam and we were just delighted with how our taste buds reacted. I think we are going to make them both available for purchase. Nutty Monkey Spread…banana jam and peanut butter in one jar. That is just crazy talk! 

Suggestions for enjoying your J+S homemade PB: 

- Combine with J+S Drunken Monkey Jam for a delicious sandwich or just go all the way and get yourself some Nutty Monkey Spread. 

- Eat on cinnamon raisin bread (The Jam Stand will be selling homemade bread soon. This is my favorite way to enjoy some fresh PB.) 

- Put on some celery and get your crunch on…



How exactly does a monkey get drunk these days? Well, you coat his bananas in sugar, add a splash of rum, and he becomes one saucy monkey.

Add some homemade peanut butter to the mix and your monkey will go NUTS. Okay, okay, that should cover the cheesy quota for the year… Sometimes we just can’t help ourselves!

When debating what kind of jam to venture into next, we took seasonality into account. In the cold winter months when fresh fruit is near impossible to come by, one has to be very thoughtful of their selections. Bananas are one of those rare fruits that stay fresh and delicious all year round. 

We started our jam with some just ripe bananas. None were too brown, as the natural pectin in the fruit would be too low— not allowing a proper gel.

Coat the bananas with a yummy sugar mix and let rest. 

Cook those babies up…

and Ta-Da!! Delicious drunken monkey jam!

We made a Dairy-Free Strawberry Cheesecake for our lactose friend Mr. Jason Schwartz! Who knew that Tofutti's Better than Cream Cheese is actually DELICIOUS?!?? The secret ingredient was our Strawberry Jam topping..

the J+S recipe for Dairy-Free Strawberry Cheesecake

 Graham Cracker Crust

  • 7 whole graham crackers
  • 1/4 cup unsalted butter, melted (if vegan use vegan butter/margarine)
  • 2 tablespoons sugar


  • 14 oz firm silken tofu
  • 8 oz Tofutti Better Than Cream Cheese
  • 2/3 cup sugar
  •  3 tablespoons flour
  • 4 eggs (omit for vegan)
  • ¼ lemon
  • 1 tsp vanilla extract
  • 1 cup vanilla soy milk


Preheat oven to 350°F. In a food processor mix graham crackers, sugar, and melted butter until crumbs are fine and stick together. Press crumbs into bottom and sides of springform pan. Bake crust for 10 minutes or until slightly golden brown. Transfer to cooling rack while preparing filling. Lower oven temperature to 300°F.


Place tofu and cream cheese in the food processor and mix for 1 minute. Then add sugar and flour and process until smooth. Mix in eggs 1 at a time.  Add lemon juice, vanilla, and milk and process until very smooth. Pour mixture into prepared crust and bake for 1 hour. Turn off heat but leave cheesecake in oven with door propped slightly open for an additonal hour.

Chill 5-6 hours. (Preferably overnight) 

In a small saucepan heat your delicious jar of JamStand Strawberry Jam. Top with jam and fresh strawberries. ENJOY!




Who doesn't love spreadable delectable goodness? Because we most definitely DO..  We are Sabrina Valle and Jessica Quon, 2 gals in love with cooking, baking, jam making and the all around sweetness of life. 

Sabbs, my little Brooklyn hipster, and I have been meeting-up on weekends for years to try out new recipes and ideas, mostly at the request of family and friends. It actually took one disastrous run-in with grapes (those of you who have attempted peeling hundreds of tiny grapes should understand) to start the discussions of what is now The Jam Stand. We cleared the goopy grapey mess, successfully canned our delicious homemade peach preserves and decided to turn our hobby into something more. So here we are, The Jam Stand, ready to bring you wacky jams, chutneys and spreads like our banana + rum “drunken monkey jam” ..

More about us.. We met back when we were giddy 18 year-old college girls at the University of Florida. Who are we kidding? We are now in our mid-twenties giddier than ever!  

Miss Sabrina Valle, a native Floridian, moved to Brooklyn in 2007 and has been a retailing hustler ever since. She has experience in buying, sales and merchandising-- but really we just appreciate and love her discount!

One of her favorite things to do: TRAVEL. Last year, she went to six South American countries in just four months. She loves the Spanish language and the Incas!  

Her favorite Christmas gift this year: KitchenAid Stand Mixer to assist in the making of delicious treats in 2011. (Much thanks to a loving brother and his girlfriend)

On the other hand I, Jessica Quon, am a Las Vegas native. Sabbs refers to me as her non-profit, world traveling, social media, video-editing guru. Last year, I spent time in India teaching children and creating micro-loans for women in need. I also lived and traveled throughout different parts of Central America filming videos for a non-profit volunteer organization.

Some of my favorite things to do: Explore, Create, Learn, Dance, Smile… I like to consider myself an experiencer! :)

My favorite Christmas gift this year: Cuisinart Food Processor to help make the many delicious JamStand spreads!

Sabbs and I have lots of things in common i.e., love of food, traveling, salsa dancing, knitting, helping people… basically we are just trying to make the world a better, more delicious place and have a ton of fun while we’re at it!

Even though Sabbs is Ecuadorian and Puerto Rican and I’m Chinese, German and Romanian, we are frequently asked if we’re sisters to which we always reply, “YES!”  Just two silly sisters trying to spread the love...


By the way... If you are looking for grape jelly, we aren’t the ladies for you.
